Ingredients

  • 1 package (16.5 ounces) devil’s food cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • ½ cup Coffee-mate® Peppermint Mocha Flavor Liquid Coffee Creamer
  • 1 cup Nestlé® Toll House® Semi-Sweet Chocolate Morsels
  • Crushed peppermint candies (optional)

Directions

Prepare cake mix batter with water, oil and eggs according to package directions.

Line mini muffin cups with paper liners. Fill each liner with about 1 tablespoon batter.

Bake at 350° F for 15 to 18 minutes or until wooden pick inserted in cupcake comes out almost clean.

Cool in pans for 20 minutes. Remove to wire racks and cool completely.

Heat Coffee-mate Peppermint Mocha Flavor Liquid in microwave-safe bowl on HIGH (100%) power for 30 to 40 seconds. Add morsels. Cover with plastic wrap; let stand for 5 minutes.

Stir Coffee-mate mixture until combined and morsels are melted. Dip tops of cupcakes into chocolate mixture. Sprinkle with crushed peppermint candies, if desired.
