COMBINE lime juice, oil and soy sauce in a large, plastic resealable bag. Add shrimp. Seal; shake to coat shrimp with marinade. Refrigerate for 1 hour, turning once or twice. While shrimp is marinating, make rice.
COMBINE broth and Coffee-mate natural bliss Creamer in a small saucepan. Bring to a boil; stir in rice. Reduce heat to low; cover. Cook for 18 to 20 minutes or until rice is tender. Keep warm.
PREHEAT grill or broiler.
REMOVE shrimp from marinade. Thread onto skewers to make it easier to turn. Discard marinade. Grill or broil shrimp for 2 to 3 minutes on each side or until cooked through.
STIR rice and spoon onto a serving platter. Remove shrimp from skewers and arrange over rice. Sprinkle with coconut and green onion.
