Ingredients

  • 2 tablespoons olive oil
  • 1 shallot, chopped (about 1/2 cup)
  • 3 cloves garlic, chopped
  • 1 jar (16 ounces) roasted red peppers, drained, coarsely chopped
  • 1/2 cup vegetable broth
  • 1/4 teaspoon dried red chili flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 ounces dry fettuccini
  • 2 tablespoons COFFEE-MATE® natural bliss® Unsweetened Plant Based Half & Half
  • 1 tablespoon chopped fresh basil leaves

Directions

HEAT oil in large saucepan over medium heat. Add shallot and garlic; cook, stirring occasionally, for 3 minutes or until shallot is tender. Stir in red peppers, broth, red pepper flakes, salt and pepper; cook for 10 minutes. Remove from heat.

WHILE sauce is cooking, prepare pasta according to package directions.

BLEND sauce in pan with immersion blender or transfer to a blender and blend, leaving it a little bit chunky. Return sauce to pan if using blender. Stir in Coffee-mate natural bliss Half & Half and basil. Add pasta; toss to coat.
